Biography

Thomas Karbowiak is a Professor of Physical Chemistry at the Institute Agro Dijon and Director of the UMR PAM, a multidisciplinary research unit of 150 people dedicated to Food and Wine Science and Technology. He began his career as an engineer in the food industry before joining academia, where he conducts research in food technology, oenology, and materials science. His work focuses on packaging materials and their role in the preservation, safety, and shelf life of food, wine, pharmaceutical, and cosmetic products. His research activities aim to address major societal and environmental challenges by developing sustainable and innovative solutions to reduce food waste and promote the circular economy. These include the design of bio-based and biodegradable packaging, edible coatings (with a focus on probiotic microencapsulation), active and intelligent systems, as well as the valorization of traditional materials such as cork (for wine stoppers) and wood, and of polymers derived from biomass. Thomas Karbowiak is the author of more than 120 peer-reviewed international scientific publications.
